Ingredients

For the Mandelbrot

  • 3 eggs
  • 1 cup sugar
  • 3/4 cup oil
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1+1/2 cups matzoh cake meal
  • 1/2 cup non-diary chocolate chips

For the topping:

  • 1/4 cup white granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Beat the eggs, add sugar and salt.
  2. Add oil and vanilla.
  3. Add the matzoh cake meal in thirds until just combined.
  4. Cover the bowl with a dishcloth and refrigerate for 3 hours.
  5. Preheat the oven to 350 degrees Line a baking sheet with parchment paper.
  6. Whisk together the sugar and cinnamon
  7. Divide into 3 small loaves.
  8. Sprinkle the tops with cinnamon sugar.
  9. Place in oven and bake for 40 minutes
  10. Remove from oven and transfer the loaves to a baking rack to cool.

  11. Slice the loaves into pieces starting from the small end.

  12. Place the slices on the baking sheet and bake for 15 minutes.

  13. Remove from oven and transfer the loaves to a baking rack to cool.
  14. Plate and serve.
