Caramelized Spiced Sweet Potatoes

Ingredients

  • 3 pounds sweet potatoes
  • 1 large sweet onion
  • 1 large red onion
  • 6 tablespoons olive oil
  • 1 teaspoon plus 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Kosher salt and freshly ground pepper to taste

Instructions

  1. Peel potatoes.
  2. Bring a pot of salted water to a boil. Add the potatoes and let simmer for 25 minutes. Drain.
  3. When the potatoes are cool enough to handle, cut into bite-sized pieces.
  4. Peel and dice onions.
  5. Heat the olive oil in a large skillet.
  6. Add the onions and sauté. Sprinkle the teaspoon of brown sugar over the top.
  7. Continue to sauté until the onions start to caramelize.

  8. Add the potato pieces and fry, turning occasionally for about 5 minutes.
  9. Sprinkle the cinnamon and nutmeg over the top and mix to combine.
  10. Sprinkle the rest of the brown sugar over the top and toss to combine.
  11. When the sugar has caramelized, season with salt and freshly ground pepper.
  12. Serve immediately.
