-Boil the potatoes (skins on) in salted water with a pinch of sugar until tender.
-Rinse and let cool completely.
-Slice in half or quarters and put in a bowl.
-Add mayo, onion, preserved lemon, & juice, and mix thoroughly.
-Season to taste with lemon salt and pepper.
-Refrigerate for at least 1 hour before serving.
-Adjust seasoning before serving.
