Grease an 8×10 inch rectangular or a 10″ in diameter round tart pan.
Preheat the oven to 350F.
Cut the butter into small pieces
Place the butter, flour, sugar, salt, lemon zest, and olive oil in a bowl.
Beat eggs in a small separate bowl and add to the streusel mix.
Use a fork or your hands to knead everything together to form streusel crumbs.
Separate out 1/3 of the streusel and press it into the pan. Chill for 30 minutes.
Whisk jam until smooth.
Drain the sour cherries reserving about 1/2 cup of the liquid.
Mix in the cherries with the jam.
Remove the pan from the refrigerator. Evenly sprinkle the breadcrumbs over the bottom of the shell.
Layer in the sour cherries and evenly spread the mixture into the shell.
Distribute the rest of the streusel evenly over the cherries
Bake for 30 minutes until the top start to turn golden brown.
let cool for 15-20 minutes.
Remove from the pan and serve.
