Ingredients

  • 1 red bell pepper
  • 5 medium-sized tomatoes
  • 1.5 cups strawberries
  • 1 small red onion
  • 1 clove garlic
  • 1/2 cup water
  • 6 tbsp olive oil
  • 1-2 tbsp white wine vinegar
  • salt & pepper

Instructions

  1. Peel the onion and garlic clove,

  2. finely chop the garlic.

  3. Dice the pepper, tomatoes, strawberries, and onion.

  4. Finely puree the ingredients with 1⁄2 cup of water, oil, and vinegar.

  5. Season with salt and pepper.

  6. Chill for at least 1 hour.

  7. Divide into bowls or glasses & serve
