Ingredients

  • 4 lbs yellow potatoes
  • 2 med-sized onions
  • 1 cup vegetable broth
  • 1 cup white wine vinegar
  • 1 tablespoon sugar
  • 1-1 1/2 teaspoons salt
  • freshly ground black pepper
  • 1/3 cup sunflower oil
  • 1+1/2 cups thinly sliced gherkins
  • 1 med-sized cucumber
  • 1/4 cup fresh chives, finely chopped

Instructions

  1. Boil potatoes in salted water for 20-25 minutes.

  2. Drain & peel. Let the potatoes rest for about 10 minutes.

  3. Peel & dice onions.

  4. Heat the onions, broth, vinegar, sugar, salt, and pepper to a skillet. Simmer 10-12 minutes.

  5. Remove from the stovetop and whisk in the oil.

  6. Cut the potatoes into slices.

  7. Slice the gherkins.

  8. Peel the cucumber.Halve lengthwise & deseed.

  9. Halve the cucumber lengthways again and cut into quarters.

  10. Finely chop the chives.

  11. Toss the potatoes, cucumbers, chives, gherkins, and vinaigrette together in a bowl & serve
