Preheat the oven to 350 degrees F.
Line a baking sheet with baking or parchment paper
Cut the pumpkin into quarters.
Remove the seeds and cut out the stringy flesh on each piece. Set aside the seeds to roast later, if desired.
Peel the outer skin off of each section, then cut the peeled pieces into french fry-shaped pieces.
Place the olive oil in a large bowl. add the pumpkin pieces and toss to coat.
In a small separate bowl, whisk together the curry powder and kosher salt. Add a few turns of the freshly ground pepper and whisk to combine.
Sprinkle the dry spice ingredients over the oil-coated pumpkin and toss to coat evenly.
Spread the fries out on the prepared baking sheet. Bake for 30 -40 minutes.
Place the sesame seeds and olive oil in a food processor and pulse until it forms a paste. Don't worry if there are still whole sesame seeds, Add the garlic clove and the mayonnaise and pulse until combined.
