1cupplus 3 tablespoons unsalted butterroom temperature
1cupsugar
5eggs
1cupAmaretto*
3/4cupalmond leaves
Powdered sugar for dusting.
Instructions
Pit the Cherries.
Preheat the oven to 350F.
Grease and flour a 9" X 12" baking pan. Line the bottom with parchment paper.
Whisk together the flour, baking powder, and salt. Set aside.
Cream together the butter and sugar until light and fluffy for at least 5 minutes.
Add the eggs one at a time**, beating each one into the mixture for 2 minutes before adding the next.
Add the dry ingredients in thirds with half the amaretto in between.
Spread the batter onto the prepared baking sheet. Push the cherries into the batter.
Sprinkle with the almonds and bake on the middle rack for 25–30 minutes.
Depan and transfer to a wire rack.
Let cool completely.
Dust with powdered sugar*** using a sifter or strainer.
Cut into pieces. Plate and serve.
Recipe Notes
Tips: *You can easily make your own Amaretto. Here's a good recipe. **Break your eggs, one at a time, into a small dish before adding them to the batter to make sure they are not spoiled. Also, check to make sure there are no eggshell pieces. **I keep an old salt shaker on hand filled with powdered sugar for sprinkling on desserts and beverages.
