Apple Honeyed Almonds Mandelbrot

Ingredients

  • 3 eggs
  • 1+1/4 cup granulated brown or raw sugar Divided
  • 3/4 cup vegetable oil
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1+1/2 cup matzoh cake meal
  • 1 cup finely chopped dried apple
  • 1 cup honeyed almonds

Instructions

  1. Beat the eggs, 1 cup sugar and salt.
  2. Mix in the oil and vanilla.
  3. Add the matzoh cake meal in thirds until just combined.
  4. Fold in the dried apple and honeyed almonds.*
  5. Cover the bowl with a dishcloth and refrigerate for 3 hours.
  6. Preheat the oven to 350F.
  7. Line a baking sheet with parchment paper.
  8. Divide the dough into three small loaves.
  9. Sprinkle the tops with thee remaining sugar.
  10. Bake for 40 minutes
.
  11. Transfer the loaves to a baking rack to cool for a few minutes.
  12. When cool enough to handle, slice the loaves into pieces starting from the small end.
  13. Place the slices on the baking sheet and bake for 15 minutes.
  14. Remove from oven and transfer to a baking rack to cool completely.
  15. Plate and serve.

Recipe Notes

*Give them a rough chop before adding them to the batter.
