Preheat the oven to 350°F. Grease a baking dish.

Season the pork with salt and pepper. Set aside.

Peel and dice the shallots.

Heat 1 tablespoon of oil in a skillet and sauté the shallots until transparent.

Season with salt and pepper.

Chop the apricots into small pieces.

Mix the cream cheese with 1/4 cup of apricot jam. Combine with the shallots, 1/2 cup of the chopped apricots, and thyme.

Season with salt and pepper.

Spread the mixture on top of the pork.

Roll up the pork lengthwise. Secure with toothpicks.

Add the remaining olive oil to the skillet.

Sear the pork rolls briefly on all sides.

Transfer them to the baking dish, seam side down

Haet the remaining 1/4 cup of apricot jam and brush it over the pork rolls.

Bake for 20 minutes and serve.
