Bacon Cheese Chicken Roulade

Ingredients

  • 4 chicken breasts pounded thin. approx. 100 g each
  • Kosher salt and freshly ground pepper
  • 2 shallots
  • 2 tablespoons extra virgin olive oil divided
  • 4 oz cream cheese room temperature
  • 2 tablespoons chopped thyme leaves
  • 4 slices of bacon

Instructions

  1. Preheat the oven to 350F. Grease a baking dish.
  2. Season the chicken breasts with salt and pepper. Set aside.
  3. Peel and dice the shallots.
  4. Heat the oil in a skillet and saute the shallots until transparent.
  5. Season with salt and pepper
  6. Mix the cream cheese with the shallots and rosemary.
  7. Spread the mixture on top of the chicken breasts.
  8. roll up the chicken with the bacon lengthwise.
  9. Add the remaining olive oil to the skillet.
  10. Fry the chicken rolls on all sides for about 2 minutes.
  11. Transfer them to the baking dish.
  12. Bake for 20 minutes.
