Basil Beef Stuffed Tomatoes

Ingredients

  • 8 large tomatoes
  • 1 large sweet onion
  • 2 large garlic cloves
  • 2 tablespoon olive oil plus a little extra for greasing the dish
  • 1 tablespoon tomato paste
  • 1 lb ground beef
  • Kosher salt and freshly ground black pepper
  • 1/4 cup panko breadcrumbs
  • 1 cup shredded fresh basil

Instructions

  1. Wash the tomatoes. Cut off the tops (to form lids) and hollow out the tomatoes.
  2. Roughly chop the scooped-out flesh.
  3. Preheat the oven to 400°F (top/bottom heat).
  4. Peel and dice the onion.
  5. Grate the garlic cloves
  6. Heat oil in a skillet.
  7. Add the onion and sauté until it starts to brown.
  8. Stir in the garlic and sauté for 1 minute.
  9. Mix in the tomato paste, then the tomato flesh. Let it simmer for 3 minutes until some of the liquid has evaporated.
  10. Season with salt and pepper.
  11. Add the ground beef and cook, stirring until the meat is browned.
  12. Season with salt and pepper again if needed.
  13. Remove from the heat and mix in the breadcrumbs and the basil.
  14. Brush a baking dish with oil.
  15. Place the hollowed-out tomatoes in the dish and fill each with the meat mixture.
  16. Spread any remaining filling in the dish around the tomatoes.
  17. Bake for 30 minutes.
  18. Remove from the oven, plate, and serve.
