Citrus Sugar

Ingredients

  • 5 citrus I used 1 lemon, 1 lime, 1 pink grapefruit, 1 orange, 1 tangerine
  • 1 +1/4 cups granulated sugar

Instructions

  1. Preheat oven to 150F.
  2. Line a baking sheet with parchment paper.
  3. Place the sugar in a bowl.
  4. Wash the fruit thoroughly in hot water and dry.
  5. Grate the peels into a bowl containing the sugar.
  6. Knead thoroughly with your hands until the sugar is colored and moist.
  7. Spread out in a thin layer on a baking sheet lined with parchment paper.
  8. Bake for 1 hour or until the sugar is crisp and dry. Let cool completely.
  9. Scrunch the sugar up in the parchment paper, gently squeezing to break it up.
  10. Transfer to a food processor and carefully pulse to break up any large pieces of sugar.
  11. Transfer to a container with a good seal. The sugar should keep its flavor for at least 2 months.
