Grate the peels into a bowl containing the sugar.

Spread out in a thin layer on a baking sheet lined with parchment paper.

Scrunch the sugar up in the parchment paper, gently squeezing to break it up.

Transfer to a food processor and carefully pulse to break up any large pieces of sugar.
