Preheat the oven to 390F.

Line the bottom of a 9” tart pan with parchment paper.

Grease the paper-lined bottom and sides of the pan.

Roll out the puff pastry on a floured surface.

Transfer to the pan. Press it into the pan's bottom and sides and trim off the edges.

Finely chop the thyme and mix with the goat cheese.

Beat the cheese mixture with the sour cream and eggs.

Season with salt and pepper.

Spread the mixture into the pan.

Cut the chicory into wedges, then arrange it on top.

Drizzle with half of the honey.

Bake for 30 minutes until golden brown.

Transfer to a serving plate.

Drizzle with the remaining honey. Garnish with thyme sprigs.

Cut into pieces and serve.
