Filet Steak With Baked Oranges

Ingredients

  • 4 beef fillet steaks 7oz each
  • Kosher salt and freshly ground pepper
  • 3 oranges
  • 4 tablespoons olive oil divided
  • 2 cloves garlic
  • 3 medium-sized red onions
  • 2 tablespoons honey divided
  • Rosemary sprigs for garnish

Instructions

  1. Season the steaks with salt and pepper on both sides. Place in a bowl.
  2. Juice and zest 1 orange into a separate small bowl.
  3. Add 2 tablespoons of olive oil and grate in the garlic.
  4. Season with salt and pepper. Mix and pour over the steaks.
  5. Cover with plastic cling film and chill for 30 minutes.
  6. Slice the remaining 2 oranges into rounds. Set aside.
  7. Preheat oven to 350F
  8. Peel and slice the onions into thin rings.
  9. Heat the remaining olive oil in a skillet.
  10. Add the onions and sauté until transparent.
  11. Season with salt and pepper.
  12. Drizzle in 1 tablespoon of honey. Sauté until combined.
  13. Transfer to a casserole dish. Set aside.
  14. Add the remaining tablespoon of olive oil to the pan.
  15. Sear the steaks on both sides.
  16. Transfer the steaks to the casserole dish.
  17. Add the remaining tablespoon of honey to the pan.
  18. Sauté the orange slices, then tuck them around the steak.
  19. Bake for 10-15 minutes, depending upon how rare or well done you prefer.
  20. Transfer to a serving platter.
  21. Garnish with rosemary and serve.
