German Ham & Onion Torte

Ingredients

For the crust:

  • 2 cups all-purpose flour
  • 1 package dry yeast
  • 1/2 cup whole milk
  • 1 large egg
  • A pinch of white granulated sugar
  • A pinch of freshly ground pepper
  • 1/4 cup unsalted butter softened

For the ham cake:

  • 1+1/2 cups thick-cut ham cut into small pieces
  • 3 small onions peeled and diced into small pieces
  • 1/2 cup sour cream
  • 3 eggs
  • Freshly ground pepper

Instructions

Make the crust:

  1. Grease a 10-inch round springform pan.
  2. Place the flour in the bowl of a stand mixer fitted with a dough hook.
  3. Make a well in the middle of the flour.
  4. Heat 3 tablespoons of milk until lukewarm and dissolve the package of yeast in the milk.
  5. Place the dissolved yeast in the well in the middle of the flour. Add a pinch of sugar.
  6. Knead the dough to combine everything.
  7. Add the rest of the milk, egg, pepper, and butter.
  8. Knead until a dough forms.
  9. Transfer the dough to a warm bowl. Cover with a dish towel and leave in a heated place for 30 minutes.
  10. The dough should become larger, but not necessarily double in size.
  11. Turn the dough out onto a lightly floured workspace. Knead for a few minutes.
  12. Roll out into a round shape and press into the bottom of the prepared pan.

Make the Ham Cake:

  1. Preheat the oven to 400°F.
  2. Sprinkle the chopped onions and ham evenly into the pan.
  3. Whisk together the eggs, sour cream, and pepper.
  4. Pour the mixture into the springform pan.
  5. Bake for 35 minutes.
  6. Let cool for 10 minutes before removing the cake from the pan to serve.
