Glühwein Chocolate Hazelnut Cake

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 tablespoons cocoa powder
  • 9 oz. semi-sweet chocolate
  • 1 cup plus 2 tablespoons unsalted butter room temperature.
  • 1 cup sugar
  • 1 teaspoon pure vanilla extract.
  • 1 tablespoon orange zest
  • 6 eggs
  • Scant cup mulled wine
  • 1 cup hazelnuts roughly chopped
  • Sugar decorations

Instructions

  1. Preheat the oven to 350F.
  2. Line a 9' X 9" square pan with baking paper. Make sure the paper overlaps on the sides.
  3. Grease the baking paper.
  4. Whisk together the flour, baking powder, salt, cinnamon, cloves, and cocoa.
  5. Melt the chocolate in a double boiler.
  6. Beat the butter, sugar, and vanilla sugar until fluffy.
  7. Beat in the vanilla and zest.
  8. Add the eggs 1 at a time. Make sure each is fully incorporated into the batter before adding another.
  9. Beat in 2/3 of the melted chocolate.
  10. Add the dry ingredients in thirds alternating with the mulled wine.
  11. Fold in the chopped hazelnuts.
  12. Transfer the batter to the prepared pan.
  13. Bake for 35 minutes or until a knife inserted into the middle of the cake comes out clean.

  14. Once the cake has cooled.
  15. Reheat the remaining chocolate and spread it over the top.
  16. Sprinkle the sugar decorations over the top.
  17. When the chocolate topping has hardened. Cut and serve.
