Kohlrabi Apple Horseradish Soup

Ingredients

  • 1 sweet onion
  • 1 large kohlrabi
  • 2 apples
  • 2 tablespoons extra virgin olive oil
  • 2+1/2 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons grated horseradish
  • Kosher salt and freshly ground pepper

Instructions

  1. Peel and dice the onion and kohlrabi.
  2. Peel and core the apples. Cut into pieces.
  3. Heat the oil in a pan.
  4. Sauté the onions until transparent.
  5. Add the kohlrabi and apple. Cook, stirring for 3 minutes.
  6. Add the vegetable stock and bring to a boil.
  7. Turn the heat down to low. Cover and simmer for 25 minutes.
  8. Puree the soup with a hand blender.
  9. Add the cream and horseradish. Bring to a boil.
  10. Season with salt, and pepper.
  11. Transfer to bowls and serve.
