Lebkuchen Chocolate Chip Cookies

Ingredients

  • For the Lebkuchen Spice:
  • 2 teaspoons ground cinnamon
  • 2 teaspoons ground cloves
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon teaspoon ground anise
  • 1/2 teaspoon ground star anise
  • For the Cookie dough:
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup 2 sticks butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups chocolate chips

Instructions

  1. Preheat oven to 350° F.
  2. Line 2 baking sheets with parchment paper.
  3. Whisk together the lebkucken spices
  4. Combine the lebkuchen spice, flour, baking soda, and salt. Set aside.
  5. Beat the butter and sugars together until creamy.
  6. Beat in the vanilla extract.
  7. Add the eggs one at a time. Make sure the first one is fully incorporated into the batter before adding the second one.
  8. Gradually beat in the flour mixture.
  9. Fold in the chocolate chips.
  10. Roll into 1" in diameter balls and place on the prepared cookie sheets
  11. Bake for 8 to 10 minutes or until the edges start to turn golden.
  12. Transfer to wire racks to cool.
  13. Plate when slightly warm and serve.
