Ingredients

  • 1 shallot
  • 2 eggs
  • 2 large garlic cloves
  • 1 lb ground meat beef, pork, turkey, etc.
  • 3/4 cup Panko breadcrumbs
  • 1/3 cup milk
  • 1 cup mixed raw nuts unsalted, and roughly chopped
  • 1/4 cup chopped fresh chives
  • Kosher salt and freshly ground pepper

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with aluminum foil.
  3. Peel and dice the onion.
  4. Grate the garlic cloves.
  5. Beat the eggs separately.
  6. Mix the panko with the milk.
  7. Place the ground pork in a large bowl.
  8. Mix the meat with the onion, garlic, eggs, and the milk/panko.
  9. Fold in the nuts, then the chives
  10. Season with salt and pepper.
  11. Transfer the mixture to the baking sheet.
  12. Gently pat the mixture into a loaf shape. Do not pack it too tightly.
  13. Bake for 40 minutes.
  14. Let it cool for 10 minutes. Cut and serve.
