Piña Colada Oatmeal Cookies

Ingredients

  • 1+ 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup plus 6 tablespoons butter softened
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1+ 1/2 teaspoons rum extract
  • 1+ 1/2 teaspoons coconut extract
  • 3 cups oats
  • 1 cup shredded coconut sweetened or unsweetened
  • 1+ 1/2 cups white chocolate chips
  • 1 cup dried pineapple chopped

Instructions

  1. Preheat oven to 350F
  2. Line two baking sheets with parchment paper.
  3. Whisk together flour, baking soda, and salt. Set aside.
  4. Cream butter and both sugars together in a mixer.
  5. Add the eggs and mix thoroughly.
  6. Beat in extracts.
  7. Turn the mixer speed down to low and gradually add the dry ingredients until combined.
  8. Fold in the coconut, then the oats, then the chocolate chips.
  9. Using a tablespoon, form balls of dough and place on cookie sheets
  10. Bake 8-10 minutes until the edges and tops are slightly brown (leave in a few minutes more if you like them less chewy)
  11. Remove from oven and transfer to a wire rack to cool completely.
  12. Plate & Serve.
