Preheat oven to 350F

Line two baking sheets with parchment paper.

Whisk together flour, baking soda, and salt. Set aside.

Cream butter and both sugars together in a mixer.

Add the eggs and mix thoroughly.

Beat in extracts.

Turn the mixer speed down to low and gradually add the dry ingredients until combined.

Fold in the coconut, then the oats, then the chocolate chips.

Using a tablespoon, form balls of dough and place on cookie sheets

Bake 8-10 minutes until the edges and tops are slightly brown (leave in a few minutes more if you like them less chewy)

Remove from oven and transfer to a wire rack to cool completely.
