Pistachio Cilantro Crusted Chicken

chopped lightly salted pistachios

chopped fresh cilantro

panko bread crumbs

Line a baking sheet with parchment paper.

Preheat the oven to 350°F

Cut the chicken breasts into strips and season with salt and pepper.

Combine the pistachios, cilantro, and panko in a shallow bowl.

Beat the eggs in a separate small bowl.

Dip the chicken strips in the egg, and coat with the pistachio mixture.

Place on the baking sheet.

Bake for 30 minutes.

Remove from oven.

Plate and serve.
