Pistachio Cilantro Crusted Chicken

Ingredients

  • 2 lbs chicken breast
  • Kosher salt and freshly ground pepper
  • 2 medium-sized eggs
  • 1/2 cup chopped lightly salted pistachios
  • 1/3 cup chopped fresh cilantro
  • 1/3 cup panko bread crumbs

Instructions

  1. Line a baking sheet with parchment paper.
  2. Preheat the oven to 350°F
  3. Cut the chicken breasts into strips and season with salt and pepper.
  4. Combine the pistachios, cilantro, and panko in a shallow bowl.
  5. Beat the eggs in a separate small bowl.
  6. Dip the chicken strips in the egg, and coat with the pistachio mixture.
  7. Place on the baking sheet.
  8. Bake for 30 minutes.
  9. Remove from oven.
  10. Plate and serve.
