Spicy Peppery Bratwurst Soup

Ingredients

  • 1.25 cups pearl onions
  • 3 red bell peppers
  • 1 or more hot peppers Depend on how much heat you can handle.
  • 3 tablespoons vegetable oil
  • 4 bratwurst
  • 6 cups vegetable broth
  • 1 can chickpeas
  • 1/3 cup chopped chives
  • Kosher salt and freshly ground pepper
  • 1 cup sour cream or Crème fraîche

Instructions

  1. Peel the onions.
  2. Mince the hot pepper and chop the red bell pepper.

  3. Slice the sausage into rounds.
  4. Heat the vegetable oil in a large pot.
  5. Sauté the bratwurst until browned. Remove from the pot and set aside.
  6. Add the pearl onions to the pot and sauté for 2-3 minutes.
  7. When the onions start to brown, add the chopped hot pepper.
  8. Sauté for another 5 minutes.
  9. Add the bratwurst back into the pot and toss to combine. Cook for another 2 minutes.
  10. Add the bell pepper pieces and sauté briefly.
  11. Pour in the broth. Bring to a boil. Turn the heat down to low and simmer for 20 minutes.
  12. Drain and rinse the chickpeas.
  13. Add the chickpeas to the stew and cook for 5 minutes more.
  14. Season the stew with salt and pepper to taste.
  15. Divide into bowls, add a dollop of sour cream or Crème fraîche on top.
  16. Sprinkle with the chopped chives. and serve.
