Toasted Almond Käsespätzle

Ingredients

  • 1+1/2 cups all-purpose flour
  • 1 cup almond flour
  • 1 teaspoon kosher salt
  • 2 large eggs
  • 6 tablespoons whole milk
  • 1+1/4 cups almond leaves
  • 2+1/2 cups grated mild cheese
  • 2 tablespoons cold unsalted butter grated

Instructions

  1. Whisk together the flours and salt
  2. Beat the eggs.
  3. Add the eggs and milk to the dry ingredients.
  4. Knead into an elastic dough.
  5. Cover the bowl and let it rest for 30 minutes.
  6. Toast the almond leaves in a naked skillet. Set aside.
  7. Bring a pot of salted water to a boil.
  8. Preheat oven to 350F.
  9. Place a colander in the sink.
  10. Use a spätzle press or colander with large holes to push the dough into the boiling water.*
  11. When the spätzle pops up to the surface, they are done.
  12. Transfer to a colander with a slotted spoon to drain, then transfer to a large bowl.
  13. Toss the spätzle with 1 cup of the toasted almonds and grated cheese.
  14. Transfer to a greased casserole dish.
  15. Sprinkle the cold grated butter over the top.
  16. Bake for 25 minutes, scatter the remaining toasted almonds on top, and serve.

Recipe Notes

*Put spätzle dough on top of the spätzle maker over the boiling water for a few minutes to soften it.
