Toasted Sesame Curry Potatoes

Ingredients

  • 1 tablespoon curry powder
  • 4 tablespoons unsalted butter room temperature
  • 2.5 lbs. yellow potatoes
  • 1 tablespoon sesame seeds
  • 1/2 cup milk
  • 1 tablespoon sesame oil
  • Kosher salt and freshly ground pepper
  • 1/2 teaspoon sugar

Instructions

  1. Combine the curry powder with the butter. Set aside.
  2. Peel potatoes and cut into small pieces.
  3. Cook the potatoes in boiling salted water until you can easily run a fork through them.
  4. Toast the sesame seeds in a naked frying pan. Set aside.
  5. Drain the potatoes thoroughly.
  6. Pat off any excess liquid and place them in a large bowl.
  7. Mash in the milk, sesame oil, and curry butter.
  8. Mix in the toasted sesame seeds.
  9. Season with salt, pepper, and sugar
  10. Garnish with extra sesame seeds and serve.
