Wash and dry the nectarines. Halve each, remove the pits and then cut the halves into thin slices.

Place the nectarine slices in a bowl. Warm the honey slightly on the stove or in the microwave.

Drizzle the honey over the nectarine slices and gently toss to coat.

Line a baking sheet with parchment paper.

Roll out the sheet of puff pastry on a lightly floured surface. Transfer to the baking sheet.

Preheat the oven to 400 degrees F.

Arrange the nectarine slices on the puff pastry.

Sprinkle the lavender blossoms over the top.

Place in the oven and bake for 20 minutes.

Remove the tart from the oven. Let cool for 10 minutes and transfer to a serving plate.

Drizzle the remaining honey over the top of the tart, cut and serve.
