I’m all for quick and easy desserts for summer weekends. Whether it be drop-bys or invited guests,  our deck is usually full.

 

I’m cheating a bit with this recipe using store-bought puff pastry, but something’s got to give when you have non stop guests and other people’s parties to attend. Feeling entitled to cheat here.

You seriously can’t go wrong with ripe juicy nectarines. The most labor intensive part of this recipe is slicing them. Seriously.

 

Roll out the puff pastry sheet, toss the nectarine slices with honey and lavender buds, arrange them on the puff pastry, bake and you’re done.

Four ingredients people. Four.

 

For a fantastic flavor boost, I used this gorgeous blood orange honey cream from Honey Ridge Farms. A gift that has been sitting in my pantry for a while, I am so glad I finally found the perfect use for it.

 

The honey by itself is seriously delicious. So much so, I was inspired to drizzle some extra over the top of the tart before serving it.

 

The lavender adds a floral touch to the sweet and tart nectarines. To garnish the  tart, I used some fresh lavender blossoms from my garden.

 

This recipe has endless substitution possibilities. Use peaches, plums or apricots instead of nectarines. Swap out the lavender for thyme, rosemary or your favorite herb. I highly recommend using a flavored or gourmet variety of honey.

Summer entertaining and potlucking just got a lot less hectic.

 

Nectarine Honey Lavender Tart

Ingredients

  • 6 ripe nectarines
  • 1/4 cup honey, plus 2-3 tablespoons for drizzling
  • 1 sheet puff pastry
  • 1 tablespoon dried lavender

Instructions

  1. Wash and dry the nectarines. Halve each, remove the pits and then cut the halves into thin slices.
  2. Place the nectarine slices in a bowl. Warm the honey slightly on the stove or in the microwave.
  3. Drizzle the honey over the nectarine slices and gently toss to coat.
  4. Line a baking sheet with parchment paper.
  5. Roll out the sheet of puff pastry on a lightly floured surface. Transfer to the baking sheet.
  6. Preheat the oven to 400 degrees F.
  7. Arrange the nectarine slices on the puff pastry.
  8. Sprinkle the lavender blossoms over the top.
  9. Place in the oven and bake for 20 minutes.
  10. Remove the tart from the oven. Let cool for 10 minutes and transfer to a serving plate.
  11. Drizzle the remaining honey over the top of the tart, cut and serve.
