Super Simple Yogurt Cake

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon Baking powder
  • 1/4 teaspoon salt
  • 1 cup unsalted butter room temperature
  • 1+1/2 cups sugar
  • 1 scant cup whole milk yogurt
  • 4 eggs
  • Juice of 1 lemon
  • 1/3 cup honey

Instructions

  1. Grease a springform cake pan and set aside.
  2. Preheat the oven to 400 degrees F.
  3. In a separate bowl whisk together the flour, baking powder, and salt. Set aside.
  4. Beat the butter and sugar with the whisk attachment until creamy.
  5. Add the eggs one at a time, making sure each is fully incorporated into the batter before adding the next.
  6. Beat in the yogurt and the honey.
  7. Beat in the lemon juice.
  8. Fold the dry ingredients into the batter.
  9. Transfer the batter to the prepared pan, smoothing it out with a spatula.
  10. Place in the oven and bake for 40 minutes or until a knife inserted into the center of the cake comes out clean.
  11. Remove and let cool for 15 minutes before removing from pan.
  12. Sprinkle with powdered sugar and serve.
