Full disclosure: I left this Super Simple Yogurt Cake in the oven a bit too long and burned the sides a bit. However, using a serrated knife, I gently carved off the burned parts. Then coated the sides in powdered sugar. We’ve all been there. So I am mentioning this fix to you all for future reference. Some things you just can’t get away from. Mine is having to photograph my recipes. It’s worth the extra effort when the result is a creative solution.

However, in summer, I am all about whipping up simple desserts and recipes. Firstly, who wants to be in a hot kitchen when it is hot outside? Secondly, who wants to spend hours indoors in the kitchen when the weather is beautiful?
This Super Simple Yogurt Cake is ripe for additional tweaking and customizing. Also, it’s a great way to use up leftover ingredients you have hanging out in your pantry or fridge. Obviously, in summer this recipe screams for berries. Blueberries, strawberries, raspberry, gooseberries, blackberries or a mix.
More flavor variation ideas:
Chop up a combination of fresh mint, thyme, lemon balm leaves from your garden and sprinkle it into the batter. Get nutty with walnuts, pistachios, almonds or hazelnuts. You have the option to mix any addition into the batter or sprinkle on top before or after baking. Alternately, add flavors like orange extract and freshly grated orange zest. Do the same with grapefruit. Try adding rum or brandy. So many possibilities.
This Super Simple Yogurt Cake Simple cake requires simple decoration. Don’t over complicate decorating when a simple stencil job will do. If you bake frequently, I highly recommend purchasing a few. stencils. Lay one over the cooled cake and sprinkle powdered sugar on top. Gently remove the stencil and you have just upped the visual value of the cake’s presentation by 100%. I used a daisy pattern on this cake. Consequently, the cake sits perfectly pretty on the serving plate.
Super Simple Yogurt Cake
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon Baking powder
- 1/4 teaspoon salt
- 1 cup unsalted butter room temperature
- 1+1/2 cups sugar
- 1 scant cup whole milk yogurt
- 4 eggs
- Juice of 1 lemon
- 1/3 cup honey
Instructions

Grease a springform cake pan and set aside.

Preheat the oven to 400 degrees F.

In a separate bowl whisk together the flour, baking powder, and salt. Set aside.

Beat the butter and sugar with the whisk attachment until creamy.

Add the eggs one at a time, making sure each is fully incorporated into the batter before adding the next.

Beat in the yogurt and the honey.

Beat in the lemon juice.

Fold the dry ingredients into the batter.

Transfer the batter to the prepared pan, smoothing it out with a spatula.

Place in the oven and bake for 40 minutes or until a knife inserted into the center of the cake comes out clean.

Remove and let cool for 15 minutes before removing from pan.

Sprinkle with powdered sugar and serve.
