Peel garlic cloves & slice thinly.
Peel 3 red onions and cut into rings.
Heat the oil in a skillet. Add onions and stir fry until transparent.
Add garlic & and anise seeds. Fry 1 minute
Add honey, rosemary & thyme. Fry until caramelized.
Add water and vinegar to the pan and cook until reduced.
Press the puff pastry into a tart pan. Use a fork to poke holes in the bottom of the pastry.
Preheat the oven to 350F
Whisk together cream, ricotta, & eggs.
Season with salt & pepper.
Crumble in the goat cheese on top of the puff pastry.
Layer the caramelized onions on top, then pour in the cream.
Bake 35-40 min.
Let cool 15 minutes before serving.
