Caramelized Onion Goat Cheese Tart

Ingredients

  • 1 garlic bulb
  • 3 red onions
  • 1 T vegetable oil
  • 2 t anise seeds
  • 1 t honey
  • 1 t dried rosemary
  • 1 t dried thyme
  • 1/2 cup water
  • 2 T balsamic vinegar
  • 1 Puff pastry sheet
  • 1/2 cup heavy cream
  • 1/2 cup ricotta
  • 2 eggs
  • Salt & pepper to taste
  • 7 oz goat cheese

Instructions

  1. Peel garlic cloves & slice thinly.

  2. Peel 3 red onions and cut into rings.

  3. Heat the oil in a skillet. Add onions and stir fry until transparent.

  4. Add garlic & and anise seeds. Fry 1 minute

  5. Add honey, rosemary & thyme. Fry until caramelized.

  6. Add water and vinegar to the pan and cook until reduced.

  7. Press the puff pastry into a tart pan. Use a fork to poke holes in the bottom of the pastry.

  8. Preheat the oven to 350F

  9. Whisk together cream, ricotta, & eggs.

  10. Season with salt & pepper.

  11. Crumble in the goat cheese on top of the puff pastry.

  12. Layer the caramelized onions on top, then pour in the cream.

  13. Bake 35-40 min.

  14. Let cool 15 minutes before serving.
