Onion Goat Cheese Tart

The “Onion Goat Cheese Tart” title of this dish is misleading. There are a whole lot of other flavors happening here. First of all, the tart contains a whole head of garlic and a healthy sprinkling of anise seeds. Additionally, those onions are caramelized with honey and balsamic vinegar. There is also the business of herb infusion with dried rosemary and thyme.

The crust of this Onion Goat Cheese Tart is the easiest part. Feel free to use your own crust recipe. However, a sheet of puff pastry is much quicker and easier. Also, it gives the tart a lighter, fluffier feel.  I also sometimes use them for sweet versions of tarts, not just savory ones.

A brief sidebar about tart pans. I made this Onion Goat cheese Tart in a rectangular tart pan with a removable bottom. You can also use a nine-inch round pan. However, I am a huge fan of the removable bottom feature. It’s genius. If you have one, your days of digging the tart out of the pan while praying it won’t break apart are over.

Tips for Making this Onion Goat Cheese Tart:

  • If you are using a round pan, turn the puff pastry dough as you roll it out. Try to make as round a shape as possible. You can trim and tuck pieces off the edges, filling in empty spaces.
  • Everyone’s oven is different. Mine can be brutal on puff pasty and burns the bottoms of whatever I am making. Consequently, I usually place a tart with a puff pastry crust on a sheet pan. Then I place it in the oven. This protects the pastry from burning.  However, be aware this may extend the dish’s baking time by five or 10 minutes.
  • To amp up the anise flavor is this tart, toast the anise seeds in a make skillet. Then add them to the recipe.

Caramelized Onion Goat Cheese Tart

Ingredients

  • 1 garlic bulb
  • 3 red onions
  • 1 T vegetable oil
  • 2 t anise seeds
  • 1 t honey
  • 1 t dried rosemary
  • 1 t dried thyme
  • 1/2 cup water
  • 2 T balsamic vinegar
  • 1 Puff pastry sheet
  • 1/2 cup heavy cream
  • 1/2 cup ricotta
  • 2 eggs
  • Salt & pepper to taste
  • 7 oz goat cheese

Instructions

  1. Peel garlic cloves & slice thinly.

  2. Peel 3 red onions and cut into rings.

  3. Heat the oil in a skillet. Add onions and stir fry until transparent.

  4. Add garlic & and anise seeds. Fry 1 minute

  5. Add honey, rosemary & thyme. Fry until caramelized.

  6. Add water and vinegar to the pan and cook until reduced.

  7. Press the puff pastry into a tart pan. Use a fork to poke holes in the bottom of the pastry.

  8. Preheat the oven to 350F

  9. Whisk together cream, ricotta, & eggs.

  10. Season with salt & pepper.

  11. Crumble in the goat cheese on top of the puff pastry.

  12. Layer the caramelized onions on top, then pour in the cream.

  13. Bake 35-40 min.

  14. Let cool 15 minutes before serving.
