Drain the sauerkraut well. Finely dice the onion.
Heat the clarified butter in a skillet.
Add the onion. Cook until transparent.
Stir in the sauerkraut.
Season with salt, pepper, and sugar to taste.
Stir in harissa and cook a few minutes more.
Stir in broth and cream.
Lower the heat. Simmer for 15 minutes.
Season again with with salt, pepper and sugar to taste.
Remove from heat and serve.
