Bring a large pot of salted water to a boil
Peel the potatoes and cut into pieces.
Boil potatoes for 15-18 minutes or until you can easily run a fork through them.
Dram and transfer to a mixer.
Add the preserved lime, buttermilk, and butter.
Use the whisk attachment towhee until combined.
Mix in the brine, sugar, salt, and pepper. Adjust amounts to you taste.
Transfer to a bowl and serve.
