Ingredients

  • 3 Lbs yellow potatoes
  • 1/2 preserved lime minced
  • 1/4 cup buttermilk
  • 4 tablespoons butter
  • 1 teaspoon preserved lime brine
  • 1 teaspoon sugar
  • Kosher salt & freshly ground black pepper to taste.

Instructions

  1. Bring a large pot of salted water to a boil

  2. Peel the potatoes and cut into pieces.

  3. Boil potatoes for 15-18 minutes or until you can easily run a fork through them.

  4. Dram and transfer to a mixer.

  5. Add the preserved lime, buttermilk, and butter.

  6. Use the whisk attachment towhee until combined.

  7. Mix in the brine, sugar, salt, and pepper. Adjust amounts to you taste.

  8. Transfer to a bowl and serve.
