Boiled Cider Pear Oatmeal Cookies

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon apple pie spice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup 1 stick unsalted butter, room temperature
  • 3/4 cup brown sugar
  • 1/2 cup white granulated sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1/3 cup boiled cider
  • 3 cups rolled oats
  • 1 cup chopped dried pear

Instructions

  1. Heat oven to 350°F.

  2. Line two baking sheets with baking or parchment paper.

  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, apple pie spice, nutmeg, and salt.

  4. Beat the butter and brown and white sugars until well combined.

  5. Add the eggs and vanilla. top the mixer at intervals and scrape down the sides of the bowl.

  6. Beat in the boiled cider until just combined.

  7. Add the combined dry ingredients.

  8. Mix in the oats and pear pieces.

  9. Use a spoon or cookie scoop to portion out the cookie dough on the baking sheets.

  10. Bake 8 to 10 minutes or until the cookies start to turn golden brown.

  11. Remove from oven and transfer to wire racks to let the cookies cool completely.
