Preheat the oven to 350F
Roll out the puff pastry sheet on a lightly floured surface.
Cut out 12 shapes.
Place 6 shapes on a parchment lined baking sheet.
Brush with maple syrup.
Place brie in the center of each.
Use the toothpick to make leaf vein impressions in the remaining 6 shapes.
Brush the undersides with maple syrup.
Place the leaves, maple syrup brushed side down on top of the brie.
Seal the edges with your fingers.
Beat the egg and brush over the tops of the leaves.
Bake for 20 minutes.
Remove and serve warm.
