Thanksgiving Leftovers Fried Rice

Ingredients

  • 3 tablespoons olive oil
  • 1 large sweet onion
  • 6 cups cooked rice
  • 1/4 -1/2 cup water
  • Leftover Brussels sprouts or string beans
  • Leftover mashed potatoes
  • Leftover Sweet potatoes
  • Leftover stuffing
  • Leftover turkey meat or pieces
  • Leftover cranberry sauce
  • Leftover gravy

Instructions

  1. Peel and dice the onion

  2. Heat the oil in a large skillet

  3. Sauté the onion until transparent.

  4. Add the rice and cook, stirring until the rice starts to brown. Add the water if the rice in the pan gets too dry.

  5. Preheat the oven to 250F

  6. Line a sheet pan with parchment paper.

  7. Spread the fried rice out on the sheet pan.

  8. Scatter the Brussels sprouts and/or green beans over the rice.

  9. Lay out small scoops of the potatoes and stuffing over the top.

  10. Scatter the turkey over the top.

  11. Dollop the cranberry sauce.

  12. Pour the gravy into a squeeze bottle and drizzle gravy over the top.

  13. Place in the oven and cook for 25 minutes.

  14. Remove and serve immediately.
