Potato Latkes

Ingredients

  • 2 pounds potatoes
  • 1 cup chopped sweet onion
  • 2 eggs
  • 1/2 cup flour
  • 1 teaspoon kosher salt
  • Peanut oil for frying

Instructions

  1. Peel potatoes and shred them in a food processor (grate them if you do not have a food processor)

  2. Mix the chopped onion together with the shredded potatoes

  3. Using a sieve squeeze as much liquid as you can out of the potato/onion mixture.

  4. Add eggs, flour, and salt and mix thoroughly.

  5. Place a later of paper towels next to the stove.

  6. Add about ΒΌ cup of peanut oil to a frying pan and heat.

  7. When the oil is sizzling, form a small ball out of the mixture, place it in the pan, and flatten it with a spatula.

  8. After a few minutes, flip the latkes to brown on both sides.

  9. Transfer to the paper towels. Gently pat to remove excess oil.

  10. Transfer to a platter and serve warm.
