Buttermilk Cilantro Mashed Potatoes

Ingredients

  • 2.5 lbs white potatoes
  • 1 cup buttermilk
  • 3 tablespoons unsalted butter
  • Kosher salt and freshly ground pepper
  • 1/2 cup roughly chopped fresh cilantro

Instructions

  1. Peel potatoes and cut into 1" pieces.

  2. Cook in boiling salted water until you can easily run a fork through them.

  3. Drain thoroughly.

  4. Pat off any excess liquid and place the potatoes in the bowl of your mixer.

  5. Add buttermilk and butter.

  6. Beat on the lowest setting until smooth.

  7. Season with Kosher salt and freshly ground pepper.

  8. Fold in the chopped cilantro and serve.
