German Currywurst Casserole

Ingredients

  • 2+ 1/4 lbs yellow potatoes
  • 1+ 1/2 teaspoons salt
  • 1 teaspoon hot paprika
  • 5 tablespoons vegetable oil divided
  • 1 onion
  • 2-3 garlic cloves
  • 3.5 oz scallions
  • 1.3 lbs ripe tomatoes
  • 1+1/2 tablespoons curry powder
  • 1+1/2 tablespoons tomato paste
  • 2 tbsp brown sugar
  • 1/2 cup vegetable broth
  • 1/2 cup curry ketchup*
  • Kosher salt and freshly ground pepper
  • 2 tablespoons balsamic vinegar
  • 4 Bratwurst
  • 1+1/2 cups shredded Swiss cheese

Instructions

  1. Preheat oven to 300 F. Line a baking sheet with parchment paper.
  2. Peel the potatoes, and cut them into wedges.
  3. Place in a large bowl
  4. Whisk together 1+ 1/2 teaspoons of salt, 1 teaspoon of paprika, and 2 tablespoons of oil.
  5. Toss the potatoes in the mixture.
  6. Transfer the potatoes to the prepared baking sheet.
  7. Bake for 40 minutes.
  8. Peel and dice the onion and garlic.
  9. Cut the scallions into fine rings.
  10. Cut the tomatoes into cubes.
  11. Heat 2 tablespoons of oil in a pan
  12. Add the onions and sauté until translucent.
  13. Add the garlic and sauté for another minute.
  14. Sprinkle with curry and sauté.
  15. Mix in the tomato paste and sugar.
  16. Add tomatoes and scallions (reserve some scallions for garnish).
  17. Sauté for 5 minutes.
  18. Add the ketchup and broth. Bring to a boil.
  19. Simmer for 15 minutes.
  20. Season with salt, pepper and vinegar.
  21. Heat 1 tablespoon of oil in a pan,
  22. Sear the bratwurst on each side.
  23. Remove potatoes from the oven and transfer to a casserole dish.
  24. Turn the oven up to 350F.
  25. Spread half of the sauce on top of the potatoes.
  26. Lay the bratwurst on top then spread the remaining sauce on top.
  27. Sprinkle with cheese.
  28. Bake for 25 minutes.
  29. Remove from the oven, garnish with scallions, and serve.
