Ramp Pistachio Shallot Dip

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon butter
  • 1/2 cup finely chopped ramps
  • Pinch sugar
  • 2 large shallots
  • 1/2 cup lightly salted shelled pistachios
  • 2 large garlic cloves
  • Kosher salt and freshly ground pepper
  • 1 - 8 oz package Cream cheese room temperature

Instructions

  1. Heat the oil and butter in a skillet.
  2. Add the ramps, sugar, and cook, stirring until they start to brown.
  3. Remove from heat and set aside.
  4. Chop the shallots into thin rings.
  5. Chop the pistachios into small pieces
  6. Mince the garlic cloves.
  7. Combine the cream cheese with ramps, shallots, pistachios, and garlic.
  8. Season with kosher salt and freshly ground pepper
  9. Serve with your choice of crackers and or breads.
