This Ramp Pistachio Shallot Dip is the Springtime schmear you didn’t know you needed. Hold on to your bagels, folks — Ramp Pistachio Shallot Dip is about to steal your snack-time spotlight. It’s creamy, it’s dreamy, and yes, it’s basically springtime in a bowl. Plus, it’s made with a cream cheese base, so you know it’s got that smooth, luscious thing going on. (P.S. Want to lighten things up? Grab the lower-fat cream cheese. Your jeans will thank you.)
Ramps?
Now, first things first: what are the ramps in this Ramp Pistachio Shallot Dip? Ramps are wild spring onions. So think of them as the cooler, wilder cousin of scallions, showing up for a short party in April and May. Consequently, every spring, I go on a recipe ramp-age creating dishes to showcase these beauties. However, blink and you’ll miss them. Farmers’ markets are your best bet. Grocery stores? Maybe if you bribe the produce manager with cookies.
The secret to this ridiculously tasty dip? Caramelize the ramps. I’m talking olive oil, a pat of butter, a pinch of sugar, and a whole lot of love. Golden, crispy ramps take this from “meh” to “where has this been all my life?”. Only in about ten minutes flat.
Grated garlic cloves sneak into the mix too, giving this dip that extra oomph without being a full-on vampire deterrent. And let’s not forget the pistachios. Moreover, toast them if you’re feeling fancy. I personally love them raw for that sweet, nutty contrast — but hey, you do you.
Don’t have shallots? No problem. Swap in a sweet onion and keep on dipping. Shallot police won’t be knocking at your door. Promise.
Of course, this Ramp Pistachio Shallot Dip is a cracker’s best friend. But why stop there? Slather it on a toasted bagel for breakfast. Dollop it onto roasted potatoes. Dunk grilled veggies into it like it’s your full-time job. Heck, even smear it inside a sandwich for an unexpected punch of flavor.
This dip is the spring fling your snack table deserves. It’s easy and bursting with flavor. Furthermore, it might just make you the most popular person at brunch.
Get your ramps while you can — Ramp it up! And get ready to dip like nobody’s watching.
