Whole Wheat Fig Rolls with Toasted Walnuts

Ingredients

  • 1/2 cup chopped raw walnuts
  • 3+1/4 cups whole wheat flour
  • 1 teaspoon salt
  • 1 package active dry yeast
  • 1+1/2 cups lukewarm water
  • 8 dried figs cut into small pieces
  • 2 tablespoons milk

Instructions

  1. Place the walnuts in a naked frying pan over medium heat. Cook until the nuts are slightly toasted.
  2. In a separate bowl, whisk together the flour, salt, and yeast.
  3. Add the water and knead into a smooth dough.
  4. Knead in the figs and walnuts
  5. Cover the dough and let stand in a warm place for 3 hours.
  6. Line a baking sheet with parchment paper.
  7. Turn the dough out onto a floured work surface and gently knead to deflate it.
  8. Pat out the dough. Use a square cutter to shape each roll. Then place the squares on the baking sheet.
  9. Cover the dough and let it stand for 1 hour.
  10. Preheat the oven to 350F.
  11. Brush the rolls with milk.
  12. Bake for 20 minutes or until they turn golden brown.
  13. Remove from the oven. Let cool, plate and serve.
