It’s the first of November, and without shame, I’m parading out my Thanksgiving recipes (Hello Whole Wheat Fig Walnut Rolls!) I’m the type of person who plans my October-January holiday menus all year long. I collect and jot down tons of ideas and flavor combinations.  Unfortunately, I will not be in the States this year for Thanksgiving. So reluctantly, I’m forgoing the holiday dinner. All year, I look forward to creating a menu for this Super Bowl of meals. However, I’ll be tucking some of those ideas away for next year.
That doesn’t mean this space is not throwing down Thanksgiving. Over the next couple of weeks, I will be posting the recipes I would serve this year if I were creating a feast. A virtual Thanksgiving will have to do this year. However, do not feel sorry for me because I will be underwater in Indonesia.

Enough about me and my scuba diving obsession. Let’s get into these delicious whole wheat nuggets that are perfect for your Thanksgiving table. Fig Walnut Rolls contain two big fall flavors packed into a little package.

The Flavor Secret

The flavor secret here is toasting the walnuts before adding them to the dough. This makes a big difference in taste. I also used a square cutter to shape the rolls. It just seemed fancier to me. However, feel free to form them into a round shape. Alternatively, you can go free form. Use your hands to shape them for a more rustic look.
This recipe makes 8 rolls.  However, please be warned there is a four-hour rise time for the dough. So first, make sure you have enough time in your menu planning schedule to actually complete the recipe. Second,  you might want to double the recipe. Don’t count on each of your guests consuming only one of these Whole Wheat Fig Rolls per person.

Whole Wheat Fig Rolls with Toasted Walnuts

Ingredients

  • 1/2 cup chopped raw walnuts
  • 3+1/4 cups whole wheat flour
  • 1 teaspoon salt
  • 1 package active dry yeast
  • 1+1/2 cups lukewarm water
  • 8 dried figs cut into small pieces
  • 2 tablespoons milk

Instructions

  1. Place the walnuts in a naked frying pan over medium heat. Cook until the nuts are slightly toasted.
  2. In a separate bowl, whisk together the flour, salt, and yeast.
  3. Add the water and knead into a smooth dough.
  4. Knead in the figs and walnuts
  5. Cover the dough and let stand in a warm place for 3 hours.
  6. Line a baking sheet with parchment paper.
  7. Turn the dough out onto a floured work surface and gently knead to deflate it.
  8. Pat out the dough. Use a square cutter to shape each roll. Then place the squares on the baking sheet.
  9. Cover the dough and let it stand for 1 hour.
  10. Preheat the oven to 350F.
  11. Brush the rolls with milk.
  12. Bake for 20 minutes or until they turn golden brown.
  13. Remove from the oven. Let cool, plate and serve.
