Sour Cherry Peanut Blondies

These Sour Cherry Peanut Blondies are the Odd Couple that totally Works. At first glance, sour cherries and peanuts might sound like the beginning of a flavor feud. But trust me—this combo is less “food fight” and more “flavor harmony.” These Sour Cherry Peanut Blondies are rich, dense, and slathered with an indulgent peanut butter frosting. They’re basically the drama queens of the dessert tray—and we love them for it.

With leftover sour cherries and half a jar of peanut butter sitting in the pantry, a creative intervention is necessary. These Sour Cherry Peanut Blondies are one of my best improvised recipes. Adding peanut oil to the batter is genius. The result is one dense, nutty blondie. Also, leave the peanuts whole instead of chopping them. Consequently, each bite is a flavor bomb.

What are Sour Cherries?

Let’s start with the star: sour cherries. These aren’t your average sweet cherries. Nope. These little guys are tart, tangy, and packed with flavor. You can use fresh ones if you’re fancy (and it’s cherry season), or grab a jar of pitted sour cherries in juice. Either way, they bring a zing that balances all the sweet, peanutty goodness.

Now, let’s talk about the batter. It’s a classic blondie base—think brown sugar, vanilla, butter—all the things that make life worth living. Then, whole sour cherries get folded in, like surprise treasure in every bite. Once these blondies come out of the oven, still warm and just a little gooey in the center, you melt together peanut butter (smooth or crunchy, follow your heart) and peanut butter chips. Then you spread that golden glory across the top like frosting. It’s rich,  creamy, and basically, dessert frosting’s glow-up moment.

Sour Cherry Peanut Blondies with Peanut Butter Frosting

Ingredients

For the Blondies:

  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 cup firmly packed light brown sugar
  • 1 stick 1/2 cup butter, melted
  • 1 large egg
  • 1 teaspoon vanilla
  • 3 tablespoons peanut oil
  • 1 cup sour cherries pitted
  • 1 cup salted peanuts

For the peanut butter frosting:

  • 3/4 cup peanut butter
  • 3/4 cup peanut butter chips

Instructions

Make the Blondies:

  1. Preheat oven to 350 degrees F
  2. Grease an 8"x8" square pan.
  3. In a separate bowl, whisk the flour and baking powder together. Set aside.
  4. Melt the butter, transfer to the bowl of a mixer beat in the sugar.
  5. Add egg and combine.
  6. Beat in vanilla and oil.
  7. Add the dry ingredients in three parts, incorporating each part thoroughly.
  8. Stop the mixer when ingredients are just combined.
  9. Fold in the sour cherries and peanuts.
  10. Scrape batter into the pan.
  11. Bake for 30 minutes or until a knife inserted in the center comes out dry.
  12. Remove from oven and frost immediately.

Make the Frosting:

  1. Melt peanut butter and chips together in the microwave or a pan until smooth.
  2. Spread on top of the blondies.
  3. De-pan when cooled completely.
  4. Plate & serve.
