Peanut Maple Syrup Cookies

Easy & Eggless

Peanut Maple Syrup Cookies

As much as I love fabulous cookies with complex flavors, I also adore quick and easy cookie recipes. When I’m short on time and need a quick nibble or dessert for guests, these Peanut Maple Syrup Cookies are just the ticket. Also, I don’t know about you, but I seem to have a bottomless bottle of maple syrup in my fridge. No matter how much I use, it still seems full.  So these little fall nuggets are a perfect excuse to use it up.

So first, whisk together all-purpose flour, baking powder, and salt. Then cream together unsalted butter, firmly packed brown sugar, and maple syrup.  Then, gradually add the dry ingredients and fold in the peanuts. Batter is done! I got two dozen cookies out of this recipe. However, you can make the cookies larger if you like—your choice.

When you scoop the cookies out onto a baking sheet, press a few peanut halves into the top. This is just to make them look pretty. It’s optional. Bake for 15 minutes and transfer them to a baking rack to cool. Eat them when slightly warm. You’re welcome.

Peanuts

A word about the peanuts. Definitely use unsalted peanuts for this recipe. Otherwise, the result will be too salty, even for salt lovers.  Also, I can think of several substitutions for this Peanut Maple Syrup Cookies recipe. Swap out the peanuts for almonds, walnuts, hazelnuts, or macadamias. Or really go nuts and use a combination of your favorite nut varieties. Just make sure, like the peanuts, they are raw and unsalted.Peanut Maple Syrup Cookies

Eggless!

Here is another great feature of this Peanut Maple Syrup Cookies recipe. The cookies contain no eggs. So, if you have friends and family who are allergic to eggs, these are a great dessert or snack alternative. Also, for your vegan peeps, simply swap out the butter for vegan margarine or vegan butter.
