Cheeseburger for a Crowd

Once I made the hot dog cake,  there was no going back. This is the inevitable next step. What is kind of weird is I saw this recipe for a variation of a very American meal in a German cooking magazine. Ok? Maybe not so weird. Because cheeseburgers are global. Once I saw it, I could not unsee it, so here is my version. A Cheeseburger for a Crowd presented in savory cake form sounds weird, but looks delicious.
This savory cheeseburger cake (I can’t believe I just wrote those words) has a yeasted dough crust. Then it is filled with a ground meat-onion mixture. Next, pickles, ketchup, mustard, and cheese are layered in.

The only downside of this Cheeseburger for a Crowd recipe is the rise time for the dough. It is a total of 2 hours and 15 minutes. So this is not an option if you are looking to quickly throw together a meal. However, it is a sure-fire crowd pleaser and received several thumbs up last weekend when I served it at a barbecue.

Substitutions Galore

Of course, this Cheeseburger for a Crowd recipe is completely customizable to your taste. Substitute any type of ground meat you prefer for the beef version. Turkey, chicken, or even lamb would work. It all depends on your tastes. Add jalapeño slices or substitute them for the pickles. Furthermore, bacon would also be a great addition. However, I would pre-fry it halfway on the stove top or in the oven before layering it in.Cheeseburger for a Crowd

Garnish slices of this Mondo Cheeseburger for a Crowd with extra pickles and serve with an array of condiments like mustard, ketchup, and mayo. The condiment options are endless. So lay out the truffle mayo to fancy it up. Or put out the sriracha to spice things up.

Also, the other best part of this recipe, besides the taste, is not having to clean your grill after the guests leave.

Ingredients

  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 1 package active dry yeast
  • 1 cup lukewarm water
  • 1 teaspoon sugar
  • 4 plus 1 tablespoons vegetable oil divided
  • 1 egg
  • 1 medium-sized white onion
  • 1 lb. chopped beef
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Kosher salt and freshly ground pepper to taste
  • 1 cup pickle slices plus some for garnish
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 7 slices cheddar cheese
  • 2 tablespoons milk
  • 1 tablespoon sesame seeds

Instructions

  1. Whisk together the flour and salt in a mixing bowl.
  2. In a separate small bowl, dissolve the yeast in the lukewarm water, add the sugar.
  3. Make a well in the middle of the flour and pour the yeast mixture into the well.
  4. Cover the bowl and let stand for 15 minutes.
  5. Add 4 tablespoons of the vegetable oil and the egg.
  6. Use your hands or the dough hook attachment of your mixer to combine everything into a smooth dough.
  7. Cover the bowl and let stand in a warm place for 2 hours.
  8. Heat the remaining tablespoon of oil in a skillet.
  9. Add the onions and cook, stirring until they become transparent.
  10. Add the ground beef to the pan and mix to combine with the onions.
  11. Stir in the Worcestershire sauce.
  12. Cook until the meat is browned. Add the garlic and chili powder.
  13. Season with kosher salt and freshly ground pepper to taste.
  14. Remove from heat and set aside.
  15. Preheat the oven to 400 degrees F.
  16. Grease and flour a 10-inch springform pan.
  17. Roll out 2/3 of the dough into a circle (I use a kitchen scale for precise measurements.) Transfer the dough circle to the prepared pan and press the dough all the way up the sides of the pan all the way around.
  18. Fill the pan with the ground beef mixture.
  19. Add the pickle slices in a layer over the meat.
  20. Add the ketchup and mustard over the pickles in dollops.
  21. Place the cheese slices in a layer on top.
  22. Roll out the remaining third of the dough into a circle. Place it on top of the cheese and press the edges together to seal.
  23. Brush the milk evenly over the dough and scatter the sesame seeds on top.
  24. Place the pan in the oven and bake for 20 minutes or until the top is golden brown.
  25. Remove from oven. Let cool for 15 minutes before de-panning and transferring to a serving platter.
