If pizza and elegance have a delicious European cousin, it is Peach Brie Flammkuchen. This crispy flatbread comes from the Alsace region along the French-German border. Originally, bakers slid thin sheets of dough into wood-fired ovens to test the temperature before baking bread. The translation of the name is “Flame Cakes”. Clever? Absolutely. Delicious? Even more so.

Today, Peach Brie Flammkuchen turns that humble tradition into a summer celebration. Best of all, it looks fancy while requiring very little effort. That’s my favorite kind of cooking.

First, sauté cubes of speck in honey. Set aside. If you can’t find speck in the supermarket, dice up thick-cut bacon. Spread creme fraiche out over the dough bases, leaving an edge all around on each. Slice up the brie and the peaches and evenly distribute them on top of the creme fraiche. Sprinkle the speck over the top and bake in a very hot oven, at least 400F.

When the Peach Brie Flammkuchen emerges from the oven, drizzle more luscious honey over the top. Finish each with a sprinkle of peppery arugula and serve.
Flammkuchen Dough Base Alternatives:
FYI – I have struggled for years to create a dough with a thin enough crust for flammkuchen. Honestly, this was the first time I used store-bought pre-rolled flammkuchen dough bases, and it was a minor miracle.

Outside Germany, finding pre-packaged authentic Flammkuchen dough can be tricky. Fortunately, several excellent substitutes save the day. Fresh thin-crust pizza dough works beautifully when rolled paper-thin for that signature crispy bite. Alternatively, store-bought puff pastry creates an irresistibly buttery, flaky version. Finally, lavash or other thin flatbreads offer the quickest shortcut. Just add the toppings and bake until wonderfully crisp.

Because Peach Brie Flammkuchen comes together so quickly, it becomes the perfect warm-weather meal. Serve it for lunch on the patio. Enjoy it with chilled crisp white wine or rosé for dinner. Slice it into squares for a summer gathering. Everyone happily reaches for seconds.
So grab those ripe peaches before they disappear for another year. Add creamy Brie, honeyed Speck, and a handful of fresh arugula. Peach Brie Flammkuchen delivers big flavor with almost no fuss. Therefore, every bite tastes like summer decided to throw a delicious little celebration right on your plate.

Recipe Notes
*The 3 Best Equivalents & Substitutes for Store-bought Flammkuchen dough:
Thin-Crust Pizza Dough (Store-Bought): Look for fresh, unbaked pizza dough in the deli or bakery section of US supermarkets (like Trader Joe's or Whole Foods). You will need to roll it out to be paper-thin so it gets that traditional, cracker-like crunch.
Puff Pastry (Store-Bought): Many American home cooks use store-bought puff pastry (such as Pepperidge Farm), rolled out super thin. It puffs up beautifully and provides a delicious, buttery, and flaky alternative.
Lavash or Flatbread (Store-Bought): Pre-baked, thin lavash bread can be used as a quick shortcut. Simply top it and bake it until crispy.
