Plum Havarti Chicken Roulade

I found this recipe on the German website for California Walnuts. However, there are a few differences in my version. Firstly, the recipe called for the roulade to be pan-fried. I preferred to bake it. Generally, I find this a less messy process. Secondly, the plums were put in a bowl of hot water to blanch them. I preferred to parboil them. Consequently, their skins slipped right off. Thirdly, the recipe specified chopping up the plums into small pieces. I sliced them thinly. Fourthly, I swapped out the Tilister cheese in the original recipe for  Havarti. It’s one of my favorites. Lastly, I used panko breadcrumbs instead of the regular version for extra crunch.

This dish comes together quickly. However, be sure to soak the toothpicks for at least 30 minutes before using them. This prevents them from catching fire in the oven.

Tips for making this Plum Havarti Chicken Roulade:

  • I admit I went all fancy with using panko and walnuts for the coating. However, plain breadcrumbs will work just as well.
  • Switch up the nuts variety – feel free to use pistachios or almonds. Additionally, hazelnuts will add great flavor.
  • Swap out the Havarti cheese for Swiss or another variety of your preference.

Ingredients

  • 16 toothpicks*
  • 4 plums
  • 8 chicken breasts
  • salt & freshly ground pepper
  • 8 slices Havarti
  • 1/2 cup chopped walnuts
  • 1 cup panko breadcrumbs
  • 2 eggs

Instructions

  1. Preheat the oven to 350F.

  2. Bring a pot of water to a boil. Parboil the plums for 3 minutes.

  3. Plunge them into a bowl of cold water and peel off the skins.

  4. Slice thinly.

  5. Flatten the chicken breasts out with a mallet or rolling pin.

  6. Season on both sides with salt and pepper.

  7. Add a layer of plum slices on top, then arrange the cheese slices.

  8. Roll up the chicken rolls tightly and fix each with toothpicks.

  9. Briefly blitz walnuts in a blender.

  10. Whisk the walnuts together with the panko breadcrumbs.

  11. Beat the eggs in a separate bowl.

  12. Roll each piece in egg and then coat them with the breadcrumbs mixture.

  13. Place in the baking dish.

  14. Bake for 30 minutes.

  15. Remove toothpicks and serve.

*Soak the toothpicks in a bowl of water for 30 minutes.
