Ingredients

  • 1 large onion
  • 1 tablespoon Butter
  • 1 tablespoon olive oil
  • 2 garlic cloves sliced thinly.
  • 1 teaspoon dried marjoram
  • 1 teaspoon dried thyme
  • 1/2 cup white wine
  • 4 bratwurst
  • 4 cups low-sodium vegetable broth
  • 1 cup sauerkraut drained well
  • 2 tablespoons prepared horseradish plus more for garnish
  • Kosher salt and freshly ground pepper
  • Parsley for garnish

Instructions

  1. Peel and cut the onions into rings.
  2. Cut the bratwurst into pieces.
  3. Heat the butter and oil in a large pot.
  4. Add the onions and sauté until they start to brown.
  5. Add the garlic and cook, stirring until fragrant.
  6. Deglaze the pan with the wine.
  7. Add the bratwurst to the pan. Cook for 4-5 minutes, stirring frequently.
  8. Add the sauerkraut to the pot and cook for another 4-5 minutes.
  9. Sprinkle in the marjoram and thyme.
  10. Sauté for 3-5 minutes.
  11. Add the stock and bring to a boil.
  12. Turn the heat down to low and simmer for 25 minutes.
  13. Add the horseradish and cook for another 2 minutes.
  14. Season with salt and pepper to taste.
  15. Transfer to bowls, garnish with parsley and/or horseradish, and serve.
